Spinach Stuff Chicken Breast

Chicken breast butterfly cut to make a pocket.
In oven safe pan, coat bottom with olive oil and coat top of check breast.  
Sprinkle with Grill Mates Montreal Chicken seasoning. 
Broil in oven, butterfly cut down, to brown bottom first.
When golden, turn over and brown top and pocket.

drain spinach from a can (I like Popeye's).  Mix with sour cream and graded cheese.  Use pepper jack to 
make spicy..Use cheese of your liking.

Fill pocket of breast with Spinach and put back in oven.  Place back in broiler and cook until spinach starts to crust.  Remove, check chicken from done (I cut open the thickest part and check for done.)

Side with a salad of baked potato....
